Friday Fab 5 - Foodporn

Its a Foodie Friday up in here!  I'm seriously becoming one of those housewives that wants to cook up amazing meals all day long thanks to all the foodporn I see on pinterest.  Here's 5 things I plan on cooking up this weekend as I embrace my inner foodie.

1. Mayan Dark Chocolate Pudding with Salted Caramel Pistachios.  I'm actually thinking of making extra salted caramel pistachios and putting them on everything from my morning greek yogurt - to my gelato at night.

 
2. Baked Chipotle Sweet Potato & Zucchini Fritters.  These are super healthy, and I'm all about those clean eats. 

 
3. Chipotle Chicken Sweet Potato Skins.  These I'm probably looking forward to making the most as they are super quick and easy and who doesn't love potato skins - especially a loaded healthier version with spice!

 
4. Oven Baked Potato Wedges with Parmesan and Parsley.  I love how ridiculously simple this is.  Although, Ill probably switch it to cilantro instead of parsley since I have so much stacked in my kitchen I got to use up.
 

5. Thai Green Curry Turkey and Zucchini Meatloaf in a Coconut Milk Green Curry Sauce.  I'm sure we will eat the meatloaf on its own - but I'm actually super excited to turn the leftovers into a grilled cheese sandwich.  This one I know Nicholas will love.

  1. You go girl. It is addicting looking for recipes all day. Those baked potatoe wedges look amazing. May try them myself.

    1. I made those earlier as a snack for when my husband got home from work and they were amazing! I didn't presoak them in water like the recipe said, and I used the kraft parmesan cheese and dried cilantro for seasoning. They were sooo good Ill definitely make them again!

    1. I made the potato wedges earlier as a snack and they were amazing!! I tweaked them a bit to fit my pantry needs. We are also making the sweet potato loaded skins tonight. Gotta love all the food recipes on pinterest!

  3. Wow, your food goals and mine could not be more different. I'm over here trying not to burn a grilled cheese while you're gearing up to make homemade Thai, fries, and fritters. I could learn a thing or two from you sister!

    1. haha that's only because Im a SAHM now with so much time on my hands. And hopefully I don't end up burning that fancy thai grilled cheese sandwich I found!!! I've burned so many in the past (trick is to use thick bread so I can scrape off the burnt part and still have a good sandwich). Oh I made the wedges earlier and they were super easy and so yummy! Put on your kitchen timer and no way you can burn them :)

  4. Stephanie - you note that at least one of these is quick/easy, but I find that hard to believe. Plus, you're already a gourmet cook, right? So easy for you is relative. Good luck on those dishes - let me know how they turn out!

    1. Lady it was totally easy! The kind of easy that any of the Clueless cast could make. Preheat oven to 450 degrees. Grab some tatoes, wash them, cut them into 6 pieces long. Pat them dry. Toss them in a bowl with olive oil, salt, pepper and chilli flakes (or whatever seasoning you want). Put them on a tray skin side down for 45 mins. When they are out, put them back in a bowl and toss them with some kraft parmesan cheese (or shredded cheese if you have the real one) and either dried or fresh parsley or cilantro. Ta da!!!

      and I've made them 3 times this weekend because they are that good!

  6. Those chipotle chicken potato skins sound delicious! I'm pinning the recipe for the dark chocolate pudding with pistachios. YUM!
